Undhiya is a famous gujarati dish. surat is typically known for its mouth-watering undhiya. Bharat surti undhiyu masala powder, when added to undhiya along with flat green beans, sesame, coconut, and peanuts; Brings out the perfect taste, flavour, and aroma.

Ingredients: Cinnamon, Coriander, Cumin, Black Pepper, Sesame Seeds, Cloves, Blac Cinnamon, Nutmeg, Shah Jeera, Red Chilli, Javantri, Star Anise, Bay Leaves, Triphala.


  • 1. Slow roast ground nut, sesame seeds and coconut in pan separatly. Partially grind the mixture of three ingredients.
  • 2. Add 2-3 tsp of undhiyu masala powder, oil, chopped green coriander and garlic, mix well.
  • 3. Add remaining mixture into cut out brinjal or banana. Add rest mixture in papdi undhiya and cover the vessel. Let it cook for 5 minutes. Add more masala if needed. This undhiyu masala will give undhiya great aroma.
